If you can’t tell now, I’m a huge fan of quick, FAST dinners. I don’t have time to mess around in the kitchen, I have a full-time job, dog, cat, fish, and a lot of plants. So if I can make dinner easy on myself, I will.
My boyfriend and I had just spent a weekend in Texas, eating all the deliciousness (you can check that out at It’s Phil’s Grill). Texas is great, but our guts were dying after that weekend. Too much good meat. When we got back to LA we decided we should eat something healthy. However, I was still beat from work and the trip.
What should I make for dinner?
I decided to do a quick one sheet pan meal. Sheet pan dinners are my go-to. Slice up your eggplant, clean your veggies, preheat your oven to 400°f, get that sheet pan ready!
Pro life tip: I like to use flavored or infused oils a lot. They just add a lot of depth and flavors without having to develop them over time.
Spice everything, toss it in olive oil and put on the baking sheet. A good time for veggies to roast is 20 – 25 minutes, however sometimes it can take longer. Just keep an eye on it. Also, it’s good to give the veggies a stir and/or flip halfway between.
Enjoy with wine, and you are all set!
